2021 La Boussole Pinot Noir 'Sud,' BadenPinot noir 2021 from Frostberg in Mnchweier, limestone soils, medium elevation facing evening sun, west south west facing. Farmed organically, with used of various blend of cover crops and spontaneous vegetation, and sheeps during wintertime. Native natural fermentation, with good care of temperature and almost only pump over. Aged in oak for 12 month (50% new) then 8 month in tank. No filtration, a bit of SO2 before bottling (50ppm).
